Oxidative stress is one of the negative effect of harmful enviromental factors which affects on living organizms.because of oxidative stress develops diseases, like : heart attack, immune reactions,apoptosis,age-related disease, ect. Living organisms have developed powerful anti-oxidative systems which protect organisms from oxidative stress.Anti-oxidative systems can be enzymatic or nonenzymatic. Enzymatic antioxsidants are: superoxide dismutase, catalase and glutathione peroxidase .nonenzymatic antioxidants: vitamins , flavonoids. Flavanoids are ubiquitous plant secondary products, which can protect living organisms from oxidative stress by stabilizing the reactive oxygen species.however, sometimes flavanoids can act as prooxidants, promote the oxidation of other compounds. Prooxidant or antioxidant properties of flavonoid depends most of all on its concentration. The aim of our research was to study the effect of flavanoid fractions and quercetin on the antioxidant enzymes’ activity in rat brain. At the beginning of the experiment we isolated flavanoid fraction from saperavi wine and determined flavanoids concentration by AlCl3 colorimetric method.then research how flavanoid fraction and quercetin act on catalase and superoxide dismutase enzymes activity in rat brain in vivo. The results showed that, a5 day injection of quercetin and a flavanoid fraction exstracted from wine,in rat, at a final concentration of 20mg/kg, had ro reliable effect on catalase and superoxide dismutase in the brain due to the low activity of the prooxidant systems in norm.
